Wheat berries add a wonderful crunchy chewy texture to this healthy apple salad. It’s good served on its own or it can be stuffed into a pita pocket with some shredded lettuce for a great sandwich.
Ingredients:
4 cups of water
1 cup of wheat berries, rinsed and sorted
2 medium tart apples (such as Granny smith( peeled if desired, cored and diced.
1 stalk celery, chopped
2 green onions (white and light green parts) chopped
½ cup of unsweetened dried cherries or cranberries, chopped
¼ cup of golden raising
¼ cup of walnuts, toasted and chopped
¼ cup chopped fresh mint leaves
3 tablespoons vinegar cider
Zest and juice of ½ orange
Salt and freshly ground pepper to taste
1. In a large saucepan bring water to a boil. Stir in wheat berries. Return to a boil. Reduce heat, cover and simmer until water is absorbed and wheatberries are tender about 1 hour.
2. In a large bowl combine cooled wheat berries, apples, celery, green onions, dries cherries or cranberries, raisins walnuts and mint. In a large bowl mix vinegar, orange zest, orange juice. Pour over the gain mixture tossing to coat. Season to taste with salt and pepper. Serve at room temperature.
Indications:

Walnuts: Marrow of walnuts calm the nerves, laxative for elderly, strengthens the reproductive tissues. High in potassium, magnesium, vit A, reduces serum cholesterol
Celery: Cleanses the mind and emotions, increases ether to promote meditation. Helpful in Pitta and Kapha arthritis, adrenal disorder, regulates the nervous system.
