Indian Spiced Vegetable dish





1 cup of Yams (or Butternut squash)

1 cup of Sweet potatoes

1 cup of Red potatoes

1 cup of Dutch potatoes

2 cups of Golden beets


Marinate:

¼ cup of Olive oil

½ tsp of Coriander

½ tsp of Cinnamon

¼ tsp of Cayenne pepper


Marinate above veggies for 1 hour.


Put in the oven plate for 45 minutes on 400 F under foil.

Add during the last 15 minutes without foil: Carrots, Broccoli, Red Bell Peppers.


Garnish with chopped coriander or dill leaves (optional)


Indications: Squash: Demulcent, expectorant, nutritive and helpful with dry cough, high in Vit. A Sweet potatoes: reduce the risk of cancer (especially lung), help with convalescence. Potatoes: Strengthens the body, lowers blood pressure and balances alkalinity and acidity. (Diabetes should avoid potatoes and starchy vegetables) Beets: Build blood, help with digestive disorder and anemia, juice more medicinal, helps with gallbladder and liver disorders
